Parmesan Thins. Savoury and crispy little appetizers.

 



Makes 1– 20 (I used a 1 1/4 inch cookie cutter)

1/2 cup all-purpose flour

3 tbsp butter, softened

1 egg yolk

2/3 cup grated parmesan cheese

pinch of salt

pinch of mustard powder and/or a little cayenne powder


Heat oven to 400°F.

Rub together the flour and butter in a bowl using fingers, then work in egg yolk, parmesan cheese, salt and mustard powder. Shape into a round, wrap in clink film and chill for 10 minutes.

Roll out to 1/4 inch thick. Using a cookie cutter or whatever you have, cut into rounds, sticks or squares.

Arrange on baking sheet and bake for 10 to 12 minutes.
