Blueberry cobbler for two. Quick last-minute dessert for two from scratch.

 



For 2 and made individually in ramekins

1/2 cup frozen blueberries (1/4 cup per ramekin)

1 tbsp butter (1/2 tbsp per ramekin)

1/4 cup all-purpose flour

1/4 cup sugar

1/2 tsp baking powder

1/4 cup milk

pinch of salt

Melt the butter: Preheat the oven to 350°F. Place 1/2 tbsp of butter in each ramekin. Place both on a cookie sheet. Pop them in the oven for about 2 to 3 minutes until the butter is melted.

Whisk the batter: While the butter melts, mix the flour, sugar, baking powder and salt in a small bowl. Pour in the 1/4 cup milk and stir until smooth.

Layer the ramekins: Remove the hot ramekins from the oven. Divide the batter evenly between the two dishes, pouring it right over the melted butter. Do not stir.

Top with berries: Drop 1/4 cup frozen blueberries onto the top of the batter in each ramekin.

Bake: Put the baking sheet with both ramekins into the oven and bake for 25 to 30 minutes.
