Basil – Shrimp Salad Sandwich Filling. Fresh herbs add extra flavour

 


1 pound peeled and cooked shrimp 

1/3 cup mayonnaise 

2 tbsp finely chopped fresh basil

1 tbsp finely chopped green onion (green parts only)

1 tbsp finely chopped parsley

1 tsp lemon juice

Salt and pepper


In a food processor, pulse shrimp until finely chopped. In a medium bowl, stir together the remaining sauce ingredients. Add the sauce to the pulsed shrimp. Not all at once, you may not need it all.
