Cranberry, orange oatmeal cookies.

From the Pioneer Woman these cookies are a simple twist on the traditional oatmeal cookie.


1/2 cup all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1 1/2 cups old-fashioned oats

3/4 cup dried cranberries

2 tsp grated orange zest

1/2 cup salted butter, at room temperature

1/2 cup dark brown sugar

1/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

4 oz while chocolate, melted

1. Preheat the oven to 350°F. Line 2 baking sheets with parchment paper. Combine the flour, baking soda and salt in a medium bowl and set aside. In another bowl, combine the oats, dried cranberries and orange zest.

2. Combine the butter and both sugars in a large bowl and beat until light and fluffy. Add the egg and vanilla and beat until combined.

3. Drop by tablespoonfuls onto the baking sheets about 2 inches apart. Bake until the cookies are golden brown around the edges, 14 to 16 minutes. Let cookies cookies cool completely.

4. Put the white chocolate in a medium microwave-safe bowl and microwave at 50 power in 30-second intervals until melted. Drizzle over the cookies.
