Butter-Baked Haddock
1 pound haddock fillets, boneless and skinless, about 4 oz each; fresh or frozn
1/2 cup melted butter
1/4 large lemon, for about 2 tsps of juice total
1 tsp salt
1/2 tsp pepper
1 tsp parsley
Preheat the oven to 375°F
Pat the fish dry with paper towels and place in a baking dish in a single layer. Pour the melted butter over the fish. Squeeze lemon juice over fillets and then sprinkle with dried parsley. Bake for 10 to 20 minutes, basting with butter every 5 minutes, until the fish is cooked. Serve immediately, drizzling each fillet with a little bit of the butter from the pan.
