Blender Hollandaise Sauce

 


2 egg yolks

1/4 tsp salt

cayenne pepper – dash

1 tbsp lemon juice

1/2 cup butter

In blender, combine egg yolks, salt, cayenne pepper and lemon juice, blend slightly. Heat butter until bubbly but not brown. Slowly pour butter into egg yolk mixture while blending on low speed. Blend just until thickened. Serve immediately. Makes 3/4 cup.
