Chocolate Zucchini Bread




2 1/2 cups all-purpose flour
1/2 cup cocoa
2 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 cups sugar
3/4 cup margarine
4 eggs
2 tsp orange peel
2 cups zucchini, grated
1/2 cup milk
1 cup walnuts, chopped
1 tsp vanilla

In a large bowl, sift together flour, cocoa, baking powder, baking soda, salt and cinnamon. In a second bowl mix together the sugar, margarine, eggs, orange peel, grated zucchini, milk, walnuts and vanilla. Add to dry ingredients and mix well. Bake in 2 loaf pans at 350°F (180°C) for 1 hour. Rita McDonald
