Spiced Carrots in Yogurt Sauce

 



1 1/2 lbs carrots, cut into 2 inch sticks

Spice blend

1/2 tsp chili powder

1/4 tsp cinnamon

1/4 tsp brown sugar (optional)

1/2 tsp paprika

1/2 tsp ground coriander

1/2 tsp salt

2 tbsp oil

Yogurt Topping

2 tbsp plain or Greek yogurt

1 tbsp apple juice

1 tbsp finely chopped walnuts

1 tbsp minced fresh parsley

Mix together the yogurt and apple juice. Drizzle over the cooked carrots when ready to serve and sprinkle on the walnuts and parsley. 

Instructions

Peel and cut the carrots in half lengthwise, then cut into 2-inch long pieces. Fat pieces can be cut into quarters.

If roasting, sprinkle the carrots with the spice blend and roast in a 400°F oven for about 20 minutes. Turn once and roast for another 20 minutes. 

This will also work if you just boil the carrots. Cook for probably not more than 5 minutes but cooking time will depend on the thickness of the carrot. Drain, add a knob of butter and add spice blend. Cook over low heart until the carrots are well covered and the spices have had a chance to meld into the carrots.
