Thumbprint or Bird’s Nest Cookies

 


1/ 2 cup butter

1/4 cup sugar

1 egg, separated

1 tsp vanilla

1 cup flour

finely ground walnuts 

Preheat oven to 350°F. Cream butter, add sugar gradually. Add well beaten egg yolk, vanilla and flour. Form into little balls, roll in egg white and then in the nuts. Place on a greased cookie sheet and dent with thumb. Fill each with your choice of jam or jelly. Bake for 12 to 15 minutes.

I used a level tbsp for each and got 15 cookies.
