Black Beans with Cumin and Turmeric

 


1 small onion

1 tsp cumin

1/2 tsp turmeric

1 cup black beans, rinsed and drained

1/2 bell pepper

Handful of cherry tomatoes cut in half

3 green onions

1/2 avocado, cubed

Feta cheese

Not much of a recipe. Add oil to skillet, saute onion until transparent and soft. Add the cumin and turmeric. Let spices cook with the onion for a couple of minutes and then add the black beans. Stir to combine with the spice and onion mixture. Add the bell pepper and let cook until the bell peppers are soft. Add the tomatoes, then the green onions. If you think it is getting a little dry, add some butter.

At serving time, top the beans with the cubed avocado and sprinkle all with feta cheese.
