Mincemeat Loaf

 

I used homemade green tomato mincemeat but store-bought works just fine. A delightful cinnamon and ginger glaze tops it off

2 eggs

3/4 cup white sugar

1/4 cup melted butter

3/4 cup milk

1 ¼ cups jarred mincemeat

1 ½ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

Glaze:

1/2 cup powdered sugar

1 tablespoon cream

1/4 teaspoon cinnamon

1/8 teaspoon ginger

1. Beat the eggs, sugar and butter together.

2. Stir in the milk and mincemeat.

3. Combine the next 4 ingredients together and whisk.

4. Pour it all at once into the liquid ingredients and stir completely. Pour into a well-greased loaf pan.

5. Bake at 359°F for 50-60 minutes until the loaf tests done.

6. Remove and cool for 10 minutes, remove from pan and continue cooling on a wire rack.

7. Combine the glaze ingredients and drizzle over the loaf once it’s completely cooled.
