Creamy Peas with Button Mushrooms and Sour Cream

 


1 tbsp oil

1 small onion, finely chopped

200 g, small button mushrooms

300 g, frozen peas

4 tbsp crème fraîche or sour cream

Zest of 1 lemon, finely grated

Fresh parsley, chopped

 

Heat oil in a large frying pan over low heat and gently fry the onion for 10 minutes until softened. Turn up the heat and add the mushrooms. Fry for 5-8 minutes until tender.

Add the frozen peas and heat through. Stir in the crème fraîche or sour cream, lemon zest and parsley. Check the seasoning and serve. Serves 6.
