Spicy Parmesan Pasta


Only mildly spicy, this dish is easy and quick to make. Marinating the shrimp only takes half an hour and you can be doing other things while waiting for it. The recipes calls for penne and green onion. I had neither. I used egg noodles and instead of green onion, I used spinach. Chiffonade the spinach and sprinkle on top. Basically you are looking for a bit of colour on top. 

1/3 cup olive oil
1/4 cup Parmesan cheese
4 cloves garlic, minced
1 tble brown sugar
2 tsp soy sauce
1/2 tsp red pepper flakes
1 lb shrimp, peeled and deveined or use frozen (thawed)
8 oz penne or other pasta
1 green onion, thinly sliced

Whisk together the olive oil, parmesan, garlic, brown sugar, soy sauce and red pepper flakes. Combine the shrimp with this oil mixture. Marinate for at least 30 minutes to overnight.

Cook pasta.

Heat skillet over medium heat. Add the shrimp and sauce, stirring occasionally, until the shrimp is pink. If using precooked shrimp, heat through. Add pasta and toss to combine. Garnish with Parmesan and green onion.
