Flaky Biscuits



Also called Baking Powder Biscuits, these biscuits are fast, economical and delicious! Serve with your favourite topping or just enjoy them plain with butter.

2 cups all-purpose flour
4 tsp baking powder
1/2 tsp salt
4 tbsp shortening or butter
1 cup milk

Sift flour, baking powder and salt together. Cut in butter or shortening. Make a well in the centre, turn milk in all at once. Stir lightly with knife. Turn onto a floured board, gather batter into a ball and knead gently for 20 counts. Roll dough about 1/2" thick. Cut with floured 2 1/2 inch cutter. Place on an ungreased cookie sheet about 1 inch apart for crusty sides, touching for soft sides. Bake at 450°F (230°C) for 12 to 15 minutes.

Variation: Add 1/2 cup grated Cheddar cheese to the dough before rolling out.
