Lemony Littles

Nice strong lemon flavour, easy to make and contains healthy carbs, protein and fat. Found this recipe on the Huffington Post. They are great. Quantities as is will make a lot. I usually half the recipe.


3 cups almonds
2 cups dates
1 1/2 cups shredded coconut
Zest of 2 lemons
Juice of 1 lemon
1/2 cup agave nectar or other liquid sweetener of choice
2 teaspoons of vanilla

Process the almonds in a food processor until the mixture resembles a coarse meal. Remove to bowl and set aside. Add dates to processor and process until broken down and gummy. Return almonds to processor along with dates, add coconut, lemon zest, lemon juice, vanilla and agave nectar (or other liquid sweetener) and pulse to combine. Roll mixture into balls, roll again in coconut. Store in fridge or they freeze very well.
