Cranberry Orange Nut Loaf

 

 
Along with banana, lemon and zucchini, this tangy loaf will provide you with enough variety to keep all the members of your family happy. Not to mention how handy these loaves are when unexpected company drops in. Use fresh or frozen cranberries.

1 orange
2 tbsp butter
1 egg
1 cup granulated sugar
1 cup cranberries, chopped
1/2 cup walnuts, chopped
2 cups all-purpose flour
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda

Preheat the oven to 325ºF (165ºC). Butter a loaf pan. Grate the rind of the orange, and squeeze out all the juice into a measuring cup and add enough boiling water to make 3/4 cup (175 mL). Add the orange rind and the butter and stir to melt the butter. In a separate bowl, mix together the flour, salt, baking powder and baking soda. Set aside. In another bowl beat the egg and gradually add the sugar, beating well. Alternately add the flour mixture and orange mixture, beating well after each addition. Add cranberries and walnuts. Stir just until blended and pour into loaf pan. Bake for 1 hour. Remove from pan and cool on a wire rack. 

Orange Glaze

 1 cup powdered sugar 

1 1/2 Tbsp freshly squeezed orange juice, or to reach desired consistency 

1 tsp orange zest, reserved from the orange above
